Heinz Tomato Ketchup Cupcake
The iconic Red Velvet just got a saucy reboot! Ketchup finally meets its match with the Red Velvet cupcake, an authentic American recipe which The Hummingbird Bakery first introduced to London in 2004 and which has been their bestseller ever since.
This cupcake sponge has many of the same ingredients as a Red Velvet with cocoa for a hint of chocolatey flavour and buttermilk for richness and fluffiness. It all sounds very familiar, except for the addition of everyone’s favourite Heinz Tomato Ketchup! Tomato makes sense because it is of course a fruit, so it adds its own irresistible sweetness to the sponge.
The tang of vinegar coming through in the Heinz Tomato Ketchup is similar to the white vinegar ingredient that also appears in the traditional Red Velvet recipe, which helps create an airy and fluffy sponge. The acidity of the tomatoes actually helps this little cupcake to rise!
No other frosting could be paired with this tomato-red sponge than a classic cream cheese frosting, which has an irresistible creaminess and a slight tanginess that works perfectly to balance out the sweet and sharp elements.
Heinz Beanz Cupcake
We hear you, there’s no way savoury baked beans in tomato sauce should work in a cupcake. But these are Heinz Beanz and anything is possible… Think carrot cake meets Asian red bean desserts and you’re on the right track with the Heinz Beanz Cupcake. Using beans in desserts isn’t anything new. In Eastern Asia, adzuki beans originating from China are used to make a sweet bean paste which is used in a wide range of desserts and this baked bean cupcake isn’t much different. Adzuki beans are, in fact, the same family of beans as the haricot variety used in our beloved Heinz Beanz.
The heartiness of the beans along with all the moisture from the tomato sauce mixes beautifully with light brown sugar and flour to give a naturally golden-coloured carrot cake-like sponge. While the flavour of the beans is subtle and savoury, you’ll actually be able to get the firm texture of the beans as they have been left whole to bake into the sponge. The tomato sauce gives sweetness to the mixture which pairs beautifully with the maple syrup cream cheese frosting, coloured orange to match the natural colour of Heinz Beanz. Maybe it’s the golden hue, but there’s something comforting and autumnal about this recipe that’s similar to the use of savoury pumpkin in classic American dessert recipes like pumpkin pie. Tinned baked beans shouldn’t work in desserts, but they certainly (excuse the pun) can!
Heinz Salad Cream Cupcake
Inspired by the customer favourite Eton Mess Cupcake from The Hummingbird Bakery’s bestselling Home Sweet Home cookbook, their creative bakers took the popular flavour pairing of strawberries and balsamic vinegar and used this as the basis for this incredible Heinz Salad Cream Cupcake. The Heinz Salad Cream flavoured sponge is filled and smothered with a Heinz Salad Cream flavoured frosting, which in turn has crushed meringue and chopped summer strawberries muddled through in tribute to an Eton Mess.
A few squeezes of zingy Heinz Salad Cream were added to both the sponge and the creamy mascarpone frosting and hey presto, the sharpness cuts through the sweetness of the crisp, chewy meringue and complements the juicy freshness of the strawberries beautifully. Whoever forgot to add this unique recipe to their summer dessert repertoire was one cupcake short of a picnic basket…
Heinz [Seriously] Good Mayonnaise Cupcake
This recipe is a little piece of nostalgic American baking history! If you thought mayonnaise wouldn’t work in a cake, you’d be quite mistaken. The Hummingbird Bakery sold a Chocolate Mayonnaise Bundt Cake for years, inspired by a recipe in their bestselling Life is Sweet cookbook, which utilises the richness of the eggs and oil in mayonnaise to create an incredibly moist sponge. Perhaps surprisingly, many retro American recipes would use mayonnaise in cakes as a shortcut for adding separate ingredients – pretty clever, huh?
This irresistible recipe features rich chocolate sponge flavoured with cocoa and studded with dark chocolate chips and it uses the delicious smoothness of Heinz [Seriously] Good Mayonnaise along with a splash of buttermilk to lend it an indulgently moist texture. Each cupcake is frosted with a moreish chocolate cream cheese frosting and drizzled with melted white chocolate for a decadent finish. Just like mayonnaise, more is more when it comes to this chocolate cupcake.
Heinz Cream of Tomato Soup Cupcake
The Hummingbird Bakers were beyond excited to bring a little aromatic basil into their baking to create a cupcake that delivers all the flavour of Heinz Cream of Tomato Soup. Pouring a can of Heinz Cream of Tomato Soup into the sponge mixture brings plenty of moisture and adds the natural sugars of the tomato, but best of all it gives it the glorious orange sunset colour that we know and love from Heinz Cream of Tomato Soup.
Then comes the time to let the vibrant aroma of basil make an impression by warming fresh basil leaves in double cream to gently infuse the cream with basil flavour. Whipping this up into a light and creamy frosting, the bakers decorate each cupcake with a generous swirl of basil-scented cream cheese frosting. You’ll notice that the sponge itself is quite savoury to allow the true flavour of Heinz Cream of Tomato Soup to come through, but it’s firmly in dessert territory with the sweetness of the basil cream cheese frosting.
